Just another Monday

In supporting Sir Paul McCartney's cause for Meatless Mondays, we decided to take heed and go green. Yesterday's dinner was our first attempt in going meatless and it was a roaaarrring success! What did we have? INGREDIENTS: 1 x pizza crust 1/2 cup freshly grated Parmesan cheese One 6-ounce bag baby spinach 3 plum tomatoes, chopped 4 ounces goat cheese, crumbled DIRECTIONS: Preheat the oven to 400°. Spread the dough on a baking sheet and sprinkle with olive oil and the Parmesan. Bake for 8 minutes. Toss the spinach with olive oil. Top the crust with the spinach, tomatoes and goat cheese. Drizzle the pizza with more olive oil and bake for 15 minutes more. Yup, Goat Cheese+Spinach Pizza. I didn't stick to the portions too religiously and basically adapted the recipe according to what was in the fridge. I was more concerned about the directions and getting it right. And the result? SIMPLY DELISH! Not quite used to going all veggie, it was surprising to learn that such simple, everyday, fresh AND virtually meatless ingredients, when put together, can taste so good. And without sounding like a overzealous environmentalist, going meatless (only one day a week!) not only combats obesity, but it is also a good way to reduce food miles and our carbon footprint. Did you know, for e.g., that 16 oz of red meat (approx. 1.5 Big Macs) requires 2,000 gallons of water to raise? Geez. Maybe it ought to be mandatory meatless Mondays after all.
